Creme Filled Pumpkin Donut Holes
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/4 cup granulated sugar
- 1/4 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1/4 cup heavy cream
- 2 tablespoons powdered sugar
- 1/4 teaspoon pumpkin pie spice
- Vegetable oil for frying
- Powdered sugar for dusting optional
Instructions:
In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt
In another bowl, combine the pumpkin puree, milk, melted butter, and vanilla extract
Gradually add the wet mixture to the dry ingredients and stir until just combined
Do not overmix
Heat vegetable oil in a deep saucepan or fryer to 350F 175C
Using a small scoop or spoon, drop small portions of the dough into the hot oil
Fry until golden brown, turning occasionally, about 2-3 minutes per batch
Remove the donut holes from the oil and place them on paper towels to drain and cool slightly
In a small bowl, whisk together the heavy cream, powdered sugar, and pumpkin pie spice to make the creme filling
Once the donut holes have cooled slightly, use a piping bag or a small syringe to inject the creme filling into each donut hole
Dust the filled donut holes with powdered sugar if desired
Serve warm and enjoy
