Zucchini Noodles Ragu
Zucchini noodles make a healthier alternative to traditional pasta, paired with a hearty beef ragu sauce for a satisfying meal. This dish is packed with flavor and nutrients, perfect for a cozy dinner.
Ingredients:
- 4 large zucchinis, spiralized into noodles
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 pound lean ground beef
- 1 can 14 ounces crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
Warm up a big pan with olive oil over medium-low heat
Put in the garlic and onion, and cook them until they get soft
Add the celery and carrot and cook for another two to three minutes
Break up the ground beef with a spoon as it cooks until it turns brown
On top of that, add tomato paste, oregano, basil, salt, and pepper
Simmer for 15 to 20 minutes, stirring every now and then, until the sauce gets thick
Make noodles out of the zucchini while the sauce is simmering
Warm up some olive oil in a different pan and add the zucchini noodles
Soup for two to three minutes, until just soft
Put ragu sauce on top of the zucchini noodles and serve
Before you serve, sprinkle with grated Parmesan cheese
