Vegetarian Mexican Rice Bake
A hearty and tasty vegetarian dish made with Mexican-style ingredients that is cooked slowly until its just right.
Ingredients:
- 2 cups white rice
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz corn kernels, drained
- 1 bell pepper, diced
- 1 onion, diced
- 1 can 15 oz diced tomatoes
- 1 cup vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 cup shredded cheese optional
- Salt and pepper to taste
- Cilantro for garnish optional
Instructions:
In a slow cooker, combine rice, black beans, corn, bell pepper, onion, diced tomatoes, vegetable broth, chili powder, cumin, garlic powder, salt, and pepper
Stir well to combine all ingredients
Cover and cook on low for 4-6 hours or until rice is tender
If using cheese, sprinkle it over the rice mixture during the last 30 minutes of cooking
Once cooked, garnish with fresh cilantro if desired
Serve hot and enjoy
