Vegan Peppermint Patty Chocolate Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup vegan butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegan dark chocolate chips
- 1/2 cup vegan peppermint patties, chopped
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until smooth
Add almond milk and vanilla extract to the creamed mixture and mix well
In another bowl, sift together the flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Fold in the vegan dark chocolate chips and chopped vegan peppermint patties
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each cookie
Bake in the preheated oven for 10-12 minutes, or until the edges are set
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
