Mediterranean Cannellini Bean Salad
This Mediterranean Cannellini Bean Salad is a delightful blend of cannellini beans, fresh vegetables, and Mediterranean flavors. Its perfect for a light and healthy meal or as a side dish for your favorite Mediterranean dishes.
Ingredients:
- 2 cans 15 oz each cannellini beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cucumber, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions:
In a large salad bowl, combine the cannellini beans, cherry tomatoes, red onion, cucumber, Kalamata olives, and fresh parsley
In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper
Pour the dressing over the salad and toss gently to combine, making sure all ingredients are well coated with the dressing
Sprinkle crumbled feta cheese over the top of the salad
