Grilled Lemon Herb Chicken Skewers
Grilled Lemon Herb Chicken Skewers are a great summer meal that doesnt need a lot of heat. The marinade gives the chicken great flavors, and grilling it makes it taste smoky.
Ingredients:

- 5 lbs boneless, skinless chicken thighs, cut into chunks
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions:
In a bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create a marinade
Add chicken chunks to the marinade, coat evenly, and refrigerate for at least 30 minutes
Preheat the grill to medium-high heat
Thread marinated chicken onto soaked skewers
Grill skewers for 12-15 minutes, turning occasionally, until fully cooked and lightly charred
Serve hot with your favorite side dishes
