Peach Cardamom Coconut Popsicles

For a delicious summer treat, try these vegan peach cardamom coconut popsicles. They have the sweetness of ripe peaches, the exotic flavor of cardamom, and the smoothness of coconut milk.

Ingredients:

  • 2 ripe peaches, peeled and diced
  • 1 can 13
  • 5 oz full-fat coconut milk
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

In a blender, combine diced peaches, coconut milk, maple syrup or agave nectar, ground cardamom, vanilla extract, and a pinch of salt

Blend until smooth and creamy

Pour the mixture into popsicle molds

Insert popsicle sticks into each mold

Place the molds in the freezer and let them freeze for at least 4-6 hours, or until solid

Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds
