One-Pot Chicken and Veggie Ramen Stir-Fry

A simple and delectable one-pot stir-fry made with ramen noodles, fresh vegetables, and tender chicken all cooked in a flavorful sauce. Ideal for a filling supper on a weeknight

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced thinly
  • 2 packs of ramen noodles, discard seasoning packets
  • 2 cups broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 cup snow peas, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • Sesame seeds and sliced green onions for garnish

Instructions:

Heat vegetable oil in a large skillet or wok over medium-high heat

Add sliced chicken and cook until no longer pink, about 3-4 minutes

Remove from the pan and set aside

In the same pan, add garlic and cook for 30 seconds until fragrant

Add broccoli, bell pepper, carrot, and snow peas

Stir-fry for 3-4 minutes until vegetables are slightly tender

Meanwhile, cook ramen noodles according to package instructions

Drain and set aside

In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, and red pepper flakes

Return the cooked chicken to the pan with the vegetables

Add the cooked ramen noodles

Pour the sauce over the chicken, vegetables, and noodles

Toss everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken

Season with salt and pepper to taste

Serve hot, garnished with sesame seeds and sliced green onions
