Heavenly Peach Greek Yogurt Cake
Ingredients:
- 1 cup Greek yogurt
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ripe peaches, sliced
- 1/4 cup powdered sugar for dusting
- Fresh mint leaves for garnish
Instructions:
Preheat your oven to 350F 175C
Grease and flour a 9-inch round cake pan
In a large mixing bowl, combine the Greek yogurt, melted butter, and granulated sugar
Mix until smooth and creamy
Add the eggs and vanilla extract to the yogurt mixture
Mix until well combined
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Be careful not to overmix
Pour the cake batter into the prepared cake pan and smooth it out evenly
Arrange the sliced peaches on top of the batter, pressing them slightly into the batter
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Remove the cake from the oven and let it cool in the pan for 10 minutes
Then, transfer it to a wire rack to cool completely
Once the cake has cooled, dust the top with powdered sugar and garnish with fresh mint leaves
