Feast Your Eyes on Pasta Primavera
Pasta Primavera is a vibrant and flavorful dish that celebrates the freshness of spring vegetables. This recipe combines colorful bell peppers, cherry tomatoes, broccoli, and mushrooms with al dente pasta, all tossed in a light olive oil and garlic sauce. Finished with a sprinkle of Parmesan cheese and fresh basil, its a delightful feast for both the eyes and the taste buds.
Ingredients:
- 8 oz pasta linguine, spaghetti, or fettuccine
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and sliced onion, saut until fragrant and onions are translucent
Add sliced bell peppers, cherry tomatoes, broccoli florets, and mushrooms to the skillet
Cook until vegetables are tender but still crisp
Toss in the cooked pasta and grated Parmesan cheese
Season with salt and pepper to taste
Stir until everything is well combined and heated through
Garnish with fresh basil leaves before serving
